Grill Prep and Cooking Tips from “Grillman” Jeff Tufts of Grillman Propane in Easton, Mass.

EASTON, MA July 28, 2004 -- Tired of chicken that’s more charred than grilled? Need a few pointers on how to prep the grill? Jeff Tufts, otherwise known as “The Grillman” of Grillman Propane based in Easton, Mass. shares his grilling tips with eager outdoor chefs.

“The key lies in preparing the grill, not just firing it up and loading the food onto it,” said Tufts, founder of Grillman Propane. With over 10 years of experience and more then 7,000 customers ranging from South Boston to the Cape, Grillman Propane is the expert on Propane cooking and other gas related products.

Below are a few basic tips for preparing your grill:

·    Preheat the grill. Heat both sides of the grill on high until the grates are warm. If you simply turn the grill on and immediately add the food, the food will stick to the cold grates. Also, food dries out quicker if placed on a cool grill.

·    Adjust the temperature. Don’t leave the heat on high after preheating the grill unless you’re cooking burgers. Hamburg is perhaps the only meat that can withstand high heat. Be sure to turn the grill down to low to cook roasts, steaks, chicken, fish and vegetables.

·    Clean the grill after every use. Turn the heat to high, close the lid and leave for 10-15 minutes to burn the grease off the grill. If you don’t burn the grease off the grill after each use, the grease builds up and makes the grill super hot, but doesn’t cook the food properly. Grease build-up can also cause a fire.

Tips for tasty chicken
Ok, the grill is grease-free and preheated. So, how do you go about cooking a delicate food like chicken? Chicken is a lot like fish because it’s tender and it has a lot of grease.
Here are some pointers:

·    Do not precook or boil the chicken.
·    After preheating the grill, turn one side of the grill off and the second side to low heat.
·    Place the chicken on the grill side that is off and close the grill lid. Let it bake. This is the key to tasty, grilled chicken – not dry, charred chicken.
·    Check the chicken to see if it is cooked through. Cooking times vary, but as a very general guide, chicken tenders take about 5-10 minutes and chicken wings a bit longer; ¼ to ½ chicken takes at least 20 minutes and a whole chicken at least 45 minutes. Don’t be afraid to make a small cut in the side of the chicken to ensure it is done.
·    After the chicken is cooked is the time to add a sauce or glaze. Then, briefly place the chicken on the low heat side of the grill. This will caramelize the sauce and seal it to the chicken.

“During grilling season, we give demonstrations in our Easton store and our customers are just amazed when they find out that chicken doesn’t have to be black on the outside to be done. Grilling is somewhat similar to baking in an electric or gas oven in the house. Once you learn the basics, cooking on the grill becomes a breeze,” explained Tufts.

Tank Trade-In   
Bring in your old style propane tank for an OPD upgrade or trade it in for a new or retrofitted tank. The government requires your tanks to have an Overfilling Protection Device not found on the older styles, which can no longer be filled. Grillman disposes of your old tank and makes sure you go home with a safe tank to kick off your grilling season. Trade-ins get free disposal, but if you have an extra tank to get rid of, just $5 will cover the disposal fee.
